The cauliflower consists primarily of water. This, together with a low content in carbohydrates, proteins and fats, makes it a low-calorie food source. It is a major source of fibre and vitamins, particularly vitamin C, which provide it with significant antioxidant and other properties. It fosters the formation of collagen, strengthens bones and teeth, and improves the body’s defences.
It is also an important source of calcium and phosphorus. Its high water and potassium content makes it a purifying vegetable which helps the body get rid of excess liquid. Its consumption is beneficial in cases of high blood pleasure and liquid retention, and recommended in weight loss diets.
