Producers and wholesalers of Calahorra Cauliflowers have kept the cultivation of this vegetable alive in the area since the 19th century. The know-how acquired and transmitted since then by producers from one generation to the next is now enhanced by the application of state-of-the-art techniques and continuous research efforts in the pursuit of ever better quality.
To this purpose, the Professional Association of Cauliflower Producers and Marketers, which manages and controls the PGI, tests different varieties in experimental plots to see how they adapt and evolve in local soils.
The farmers and wholesalers closely follow these tests, to acquire a better understanding of the characteristics, uniformity and consistency of the product and on the best time for harvesting it. This way, the Calahorra Cauliflower PGI is continuously adapting to new cauliflower varieties, working hard at making plantations more and more environmentally friendly.
